Delicious quinoa burgers my wife has made.  They aren’t the easiest (or cheapest) thing to make but quite delicious.  If they were easier, I would almost prefer them over some hamburgers (yes, I went there).

Ingredients:

2 full/rounded cups cooked quinoa
3/4 cup shredded cheese (I prefer mozzarella)
1/2 cup low-fat cottage cheese
1 medium carrot, grated
3 eggs
3 tablespoons all purpose flour
2 green onions, including white parts
1 /2 teaspoon sugar (or sugar substitute for even fewer calories)
1/4 teaspoon black pepper
1/8 teaspoon garlic powder
1/4 teaspoon ground cumin
Pinch of salt
EVOO for frying

Directions:

Cook quinoa according to package directions.

In a large bowl combine all ingredients above except the EVOO.  Mix together until completely mixed.

Place 1 or 2 tablespoons of EVOO in a frying pan and warm over medium-low heat.  Using a 1/4 cup measuring cup, place mixture into the pan and flatten.  Fry until they are golden brown.  Eat as a hamburger, add to a salad or rice or whatever vegetable you prefer.
