It sometimes amazes me what you can stuff inside a pepper. Peppers are pretty darn good themselves. Most people probably don’t think so. Others would rather have a carrot or piece of celery dipped in ranch. Not me, though. A nice, crisp pepper is where it’s at. I am a complete meat-a-terian but if I had to choose a vegetable to snack on while dipping it in some cool ranch dressing it would be a pepper.
So if you take this already amazing and delicious pepper and add even more amazing and delicious crap to it like cheese and meat and seasoning… you’ve just struck gold. I’m not sure where my wife found the recipe but it was fantastic. The image above isn’t mine as we used less cheese (while cheese is delicious, it is basically a flavorful calorie booster for minimal nutrition and filling) but that’s basically what it looked like. Some sliced roast beef, A1 sauce, provolone cheese and peppers. Bada-bing, bada-boom, you’ve got a Philly Stuffed Pepper with low carbs and insanely low calories.
This – of course – lead to me having a crazy amount of calories left which lead to me eating donuts for dessert. I’ve not yet decided if this is a bad thing or not. I mean, they are just about the most delicious round thing in the world, but is it bad for me to eat them as much as I do? I don’t go over my calorie limits though I do get more carbs than I probably should. I’m sure it isn’t as healthy as the protein shake I drank every night, but man… they are tasty. It’s one of the many things I need to figure out. If I’m at a calorie deficit and still losing weight, maybe I’ll just let my donuts keep on rolling.
Monday was a fairly uneventful day. I woke up and went for a walk since my legs were quite weak and my joints and feet were sore from my adventure on Sunday. I went to work and did the normal thing, then I came home and went on another walk with my wife in the crisp fall air. Finally, the delicious dinner above followed by a Plants vs. Zombies 2 marathon. It’s amazing how a dumb game can be so addicting.
This week I plan on continuing to do my steps to finish out the Turkey Challenge contest. Good news on this front, my team is getting t-shirts because we walked 500 miles as a team which is pretty awesome. I will be working over the Thanksgiving holiday but will still get to have dinner with my family and spend time with them. I will take it easy on Friday (screw Black Friday) and try my darndest at the 5K on Saturday as I go and support Janelle with her fight against cancer. Then next week I will more than likely get back into lifting 3 days a week and running at least twice.
We’ll see what my body says.
