I’ve never been a big breakfast eater. I normally did, especially because my mom would make me some delicious pancakes, but if I didn’t have it made for me I really put no effort into eating it myself. When I worked on the graveyard shift, I would eat “breakfast” but that’s because I would wake up and eat a sandwich or leftover dinner or something delicious. Maybe it’s that I’m not a “normal” breakfast kind of guy. I can do without cereal and pancakes. I love waffles, but don’t need them.
Or maybe I’m just weird.
But when I started being healthier I started eating breakfast. It began with just some eggs thrown in a container. Maybe I’d put some sort of seasoning on it, but nothing fancy. It then became oatmeal. Oatmeal with dark chocolate or oatmeal with brown sugar. Again… nothing fancy. It morphed into my Overnight Oatmeal (which is actually quite delicious) but that got old. And I realized it didn’t make me feel full for very long despite the whole grain oats. So – following my wife’s lead – I decided to start making some homemade egg McMuffins.
And they are damn delicious.
I get some whole grain (Papa Pita’s bread) with fewer calories. I get delicious cheese. And I get lots of eggs. I normally throw 2 whole eggs and 4 egg whites into a container and microwave it at work; makes a nice “omelet” easily. I seem to get everything I need from this and it is making me rethink breakfast. It may become one of my top 3 favorite meals of the day…
