1 Can Cream of Chicken Soup
1/4 Cup Fat Free Milk
1/4 Cup Unsweetened Almond Milk
1/2 Cup Fat Free Sour Cream
1 Can Cut Tomatoes w/ Green Chile Peppers
1 Cup 2% Sharp Cheddar Cheese Shredded
3/4 to 1 Bag of Nacho Cheese Doritos
1/2 Pouch Mccormick’s Low Sodium Taco Seasoning
16+ Oz cooked and shredded chicken breast
***1 Cup 2% Sharp Cheddar Cheese Shredded for topping
Stir all ingredients together except for the Doritos.
In a baking pan or casserole dish, crush Doritos and layer the bottom of the pan. Pour half of the chicken mixture on top, then crush another layer of Doritos on top. Add the rest of the chicken mixture and (optional) add more cheese to the top.
Cover and bake at 350 for about 30 minutes or until bubbling.
This is definitely not the healthiest recipe, but it is delicious. And you can find ways (fewer Doritos, skim mozzarella cheese, etc) to make it a bit healthier. It was our first attempt and it was delicious but I think I’ll adjust it next time.
